Lemon Icebox Pie

I recently made a lemon icebox pie.  The recipe tasted wonderful, but it called for Cool Whip.  I really don't think that Cool Whip even existed when folks used iceboxes and I'm not particularly fond of eating hydrogenated oil.   Does anyone have a traditional, old time recipe for Lemon Icebox Pie?  I found one using eggs and cream cheese, but since I am not planning on cooking the filling, I won't be using the one with eggs.  If you have a recipe that you wouldn't mind sharing, please post it in the comments section or just write it up on your blog and link it to mine.  Just be sure to leave me a comment so that I can check it out.


  1. My grandma used to make icebox cookies, but we never had lemon pie that way. Those cookies were delicious though... I hope I get to try some of the pie when you find a recipe!

  2. In case you can't find a recipe without eggs (which were much safer back in the olden days, I bet) you could buy pasteurized eggs (like they use in store bought mayo) at Central Market...
